The Heart of Ardent: Flourless Coconut Lime Cookies

FLOURLESS (GLUTEN-FREE) COCONUT LIME COOKIES

There’s just something about coconut and lime. Harry Nilsson got it right…

INGREDIENTS

a cup of shredded coconut
2/3 cup sugar – you can use less if you prefer
2 eggs
3 Tbsp *coconut flour
1 Tbsp coconut oil
zest of a couple limes

INSTRUCTIONS

Preheat your oven to 350 degrees.

Get the CD, Harry Nilsson’s “Nilsson Schmilsson”. Play track 3, ‘Coconut’. Or on your iPod, play the mp3 ‘Coconut’.

While you listen, mix coconut and coconut oil in a food processor for about 3-5 minutes — or until finely chopped.
Whisk the eggs in a bowl, then fold in the coconut and coconut oil mix, coconut flour, and lime zest.

Drop in teaspoons onto your baking sheet lined with parchment paper. Bake 5 minutes at 350, then remove the baking sheet.

Using a glass dipped in granulated sugar gently press the cookies flat on the baking sheet.

Bake at 350 for 5-8 more minutes until golden brown on the bottom.  Let cool for about 5 minutes before removing from baking sheet.

You’ll discover they’re chewy and delicious, as you eat them while dancing around like a happy fool…

 

*coconut flour can be added to wheat-based flour recipes to add more fiber, by substituting 10-30% of the grain-based flour with coconut flour.
